Margreet Olthof is assistant professor of Nutrition and Health at the Department of Health Sciences and the EMGO+ Research Institute for Health and Care Research, VU University Amsterdam, the Netherlands since 2005.

Margreet Olthof is trained as a nutritionist at Wageningen University and registered as nutritional scientist at the Netherlands Academy of Nutritional Sciences. She received her PhD at Wageningen University, the Netherlands in 2001. The title of her PhD thesis is:
Bioavailability and metabolism of flavonoids and cinnamic acids in humans and their effect on plasma homocysteine. In 2001 she started to work as post-doc for the Wageningen Centre for Food Sciences (WCFS, currently named TI Food and Nutrition) on the project 'Diet, Homocysteine, and Cardiovascular Disease’.

Her current research focuses on nutrition and obesity and diabetes. Her main project is titled
'A double-blind, randomized trial of the efficacy of replacing sugary drinks by low-sugar alternatives on body weight and fat mass in school children’. In addition she coordinates internships and nutrition courses for BSc and MSc students in Health Sciences.
